Viscosity is not shown in Figure 5 as an independent variable because in the case of gas-liquid mixtures, it is a function of the gas holdup (and of liquid velocity in the case of non-Newtonian liquids), and because in a real process, it will change with time due the changes in the composition of the liquid.
